Effortless One-Pan Chicken, Rice, and Veggie Bake

Looking for a healthy, high-protein meal that practically cooks itself? This one-pan baked chicken and rice is the ultimate weeknight dinner hack. By layering the ingredients directly into a glass baking dish, you save on prep time and clean up while ensuring the rice perfectly absorbs the rich chicken and vegetable broth.

It is naturally balanced, packed with colorful veggies, and perfectly portioned for four people!

Ingredients

  • 4 Chicken Breasts (bite-sized pieces ~600 g) (Migros)

  • 1 cup Rice (uncooked ~185 g) (Migros)

  • 1 cube Alnatura Vegetable Broth (Migros)

  • 1 pack Farmer's Best Vegetable Mix (frozen 750 g) (Migros)

  • 3 Red Bell Peppers (chopped ~400 g) (Migros)

  • Olive Oil (for greasing the dish ~10 g) (Migros)

  • 400 ml Hot Water

Instructions

Prep the baking dish:

Preheat your oven to 200°C (390°F). Lightly coat the bottom of a large glass baking container with olive oil to prevent sticking.

Layer the base:

Spread the 1 cup of uncooked rice evenly across the bottom of your oiled glass dish. Cover the rice entirely with the frozen Farmer's Best Vegetable Mix.

Add the fresh produce and protein:

Wash and chop the 3 red bell peppers, layering them evenly on top of the frozen veggies. Next, cut the chicken breasts into bite-sized pieces and lay them over the bell peppers.

Prepare the broth:

In a measuring jug, dissolve the Alnatura Vegetable Broth cube into 400 ml of hot water. Carefully pour the broth equally over the entire dish, ensuring all the rice at the bottom gets moistened.

Cover and bake:

Seal the top of the glass container tightly with aluminum foil. Poke a few small holes in the top of the foil to allow steam to escape.

Bake:

Place the dish in the preheated oven and bake at 200°C for 50 minutes. Let it rest for 5 minutes before carefully removing the foil (watch out for the hot steam) and serving.
